Cocoa Clouds

2 large egg whites

½ teaspoon pure vanilla extract

1/8 teaspoon cream of tartar

2/3 cup sugar

1 tablespoon unsweetened cocoa

½ cup mini semi-sweet or milk chocolate chips

 

Line two baking sheets with parchment paper and preheat the oven to 300 degrees.

In the bowl of an electric mixer, beat the egg whites on high speed until soft peaks form, about 2 minutes. Add the vanilla and cream of tartar and continue mixing at high speed for 30 seconds. Add the sugar 2 tablespoons at a time. Add the cocoa and fold in the chocolate chips.

Drop rounded tablespoons onto the prepared baking sheets, making sure they are 2 inches apart. Bake for 20 minutes, or until the bottoms are lightly browned. Transfer to a wire rack to cool completely before serving. Store in an airtight container.
