I grew up in Oak Cliff, Texas, and my mother was the best cook! She is in Heaven now, but one of my favorite childhood memory meals was her famous macaroni salad! Here is the recipe.
3 cups cooked macaroni
2 tablespoons mayonnaise
1/2 cup diced ham (pre-cut from the store is fine)
1/2 cup chopped red onion
2 chopped green onion
1/3 teaspoon paprika
2 stalks of celery chopped
1/2 teaspoon granulated garlic
1/2 cup chopped green olives
1/2 cup shredded carrots
1/2 cup diced cooked chicken
1 teaspoon of mustard
2 tablespoons thousand island dressing
1/8 teaspoon salt
1 heaping tablespoon of sweet pickle relish
1/8 teaspoon black pepper
1/2 cup shredded cheddar cheese
1 teaspoon chopped parsley to garnish
Combine all ingredients and slowly stir until blended. You can add more mayonnaise or salt to taste. The salad should be moist but not soupy. Best served cold. Enjoy!
