Flavored Vinegar

1 quart of white, cider or wine vinegar

4-5 sprigs of parsley

1 teaspoon of peppercorns

A garlic clove

2-3 sprigs of fresh herbs such as basil, chives, dill, rosemary, cilantro or others of your choice


Bring to a boil white, cider or wine vinegar, parsley, peppercorns and garlic clove. Quickly remove from heat and let stand for 2-3 days. Strain into a sterilized bottle, add your choice of fresh herbs, then seal the bottle. Let age for 2-3 weeks.
